Kale cranberry salad & coconut lime dressing

Your body will love you for this salad! This is a quick and easy raw salad to make. It's fresh and super delicious, not to mention beautiful in colour.

Ingredient option : If you're not keen on, or can't eat, kale and red cabbage then change these out for shredded lettuce and raw grated beetroot.

When using kale make sure you remove the stems and massage the leaves by scrunching them. This softens the leaves making them easier and more enjoyable to eat.


Kale cranberry salad & coconut lime dressing


Time : 10 minutes

Servings : 2 - 4 people


Ingredients

• 2 cups kale (stem removed, massaged) • 2 cups baby spinach

• 1/2 cup red cabbage

• 1/2 cup dried cranberries

• 1/2 cup fresh herbs (coriander, Italian parsley)


Coconut lime dressing :

• 1 tbsp avocado oil

• 1 tsp white balsamic vinegar

• 1 tsp maple syrup

• 1 tsp lime juice

• 3 tbsp natural coconut yoghurt


Instructions

  1. Prepare the kale - remove the stems, massage or scrunch the leaves, and then finely chop.

  2. Toss all salad ingredients into a large bowl.

  3. In a small bowl combine the dressing ingredients and stir until creamy.

  4. Dress salad and then transfer to your serving bowl. Garnish with a few extra herbs and a pinch of salt.
