I love a filing meal to start the day and being on the AIP diet can sometimes feel restricting with breakfast options. This delicious Bircher Muesli is nutritious, easy to make, and very filling. Simply made the night before, you'll have the perfect breakfast to enjoy or grab on your way out the door in the morning.
AIP Bircher muesli
Prep time : 10 minutes
Set time : overnight
Servings : 3 - 4 serves
Ingredients
• 1 cup carrot, grated
• 1 cup apple, grated
• 1/4 cup coconut thread or chips
• 1/2 cup sultanas
• 1/4 cup tigernut crumbs or slices
• 2 tsp cinnamon
• 3/4 cup coconut milk
Topping :
• Natural coconut yoghurt
• Blueberries and fresh fruit
• Toasted coconut
Instructions
Grate the carrot and apple.
In a large bowl combine the carrot and apple with all the bircher muesli ingredients.
Mix well, and transfer to a container with a lid.
Refrigerate overnight.
Serve topped with blueberries, natural coconut yoghurt and toasted coconut chips.
Note - If you prefer a lighter coconut taste, use 1/2 cup coconut milk with 1/4 cup water.
Storage
Store for 2 days, refrigerate in an airtight container.
