AIP Cranberry orange biscuits

These simple and tasty AIP biscuits are beautifully fragrant with sweet cranberry and fresh orange. Made with just a touch of maple syrup for the perfect amount of sweetness.

These biscuits have a crunchy texture. Press them out quite flat, and make sure not to over cook them. They freeze well and are versatile for baking when a biscuit base is required.


AIP Cranberry orange biscuits


Fan bake time : 10 minutes

Servings : 6 biscuits


Ingredients

• 1/2 cup cassava flour

• 1/4 cup tigernut flour

• 1 tbsp coconut flour

• 3 tbsp orange zest

• 1 tbsp fresh orange juice

• 4 tbsp maple syrup

• 1/2 cup coconut oil, melted

• 1/4 cup dried cranberries

• 1 tbsp coconut thread (optional)

• 1/2 tsp baking soda

• 2 tbsp boiling water


Instructions

  1. Preheat the oven to 180c fanbake, and line a baking tray

  2. In a large bowl, mix together flours (sift tigernut flour) and orange zest

  3. Gently melt coconut oil, add to flour mixture along with maple syrup and orange juice.

  4. Dissolve baking soda in boiling water, then stir through the biscuit mixture.

  5. Mix through the coconut thread and cranberries.

  6. Roll small balls of mixture and press flat into cookies on a baking sheet.

  7. Bake in the middle of the oven for 10 minutes or until just golden.


Storage


Keep in an airtight container for 2-3 days or freeze.
