This banana and pumpkin porridge is creamy, nutritious and very delicious. It meets all the requirements of the AIP diet so you won't feel like you're missing out on a comforting warm breakfast! It is naturally sweet and has a soft creamy texture. Serve with warm stewed apples and coconut yoghurt.
AIP Creamy banana pumpkin porridge

Servings : 2 servings
Ingredients
• 1 cup pumpkin puree
• 1 large ripe banana, mashed
• 1 tbsp coconut flour
• 3/4 cup coconut milk
• 1 tbsp ground ginger
• 1 tsp cinnamon
Topping :
• 1/2 apple, cubed
• 3 tbsp water
• toasted coconut chips
• dried cranberries
• banana chips
• cinnamon
• natural coconut yoghurt
• maple syrup
Instructions
In a small pot combine the pumpkin puree, mashed banana, coconut flour, coconut milk, ginger and cinnamon. Gently bring to a simmer, stirring constantly, until the mixture has thickened similar to the consistency of oatmeal.
While porridge is cooking, add cubed apple and water to a small pot with a lid, and stew fruit. Approx. 5 minutes.
Combine coconut chips, cranberries and banana chips in a small bowl.
Spoon porridge into bowls. Top with natural coconut yoghurt, toasted coconut mix, stewed apple, sprinkle of cinnamon and a drizzle of maple syrup.
