Loading up on vegetables does not need to be dull! This dish is full of delicious flavour from aromatic spices and has a fresh, slightly crunchy texture from it's colourful array of vegetables. Your body will be thanking you for this one, not to mention it's super quick to make!
AIP Aromatic vegetable rice
Cook time : 15 - 20 minutes
Servings : 2 people
Ingredients
• 2 cup cauliflower rice
• 1 cup carrot, grated then diced
• 2 tbsp olive oil
• 2 tsp garlic powder
• 2 tsp turmeric
• 2 tsp ground cinnamon
• 1 tsp salt
• 3 - 4 tbsp coconut milk
• 2 tbsp red onion diced
• 1 cup broccoli, diced stems and small florets
• 1/4 cup cranberries
• Red onion
• Coriander
• Baby kale or spinach
Instructions
Heat a large pan to medium heat with olive oil.
Cook the cauliflower rice, carrot, garlic, turmeric, cinnamon and salt for 5 minutes until spices are aromatic. Gently stir through the coconut milk, and cook for 3 - 4 minutes, or until the cauliflower and carrot is just soft.
Add the broccoli, red onion and cranberries to the pan. Cook for a further 3 - 4 minutes until the mixture is well heated through.
Turn off the heat, and toss through baby kale or spinach, red onion and coriander to serve.
