Beetroot & pear salad

Beets are such a nutrient dense root vegetable, I always feel like I’m nourishing my body well when I add them to my diet. This salad is beautifully refreshing, so simple and full of flavour.

AIP Beetroot & pear salad

Prep time : 10 minutes

Serving : 1 - 2 people


• 1/4 cup golden beetroot, mandolin/slice

• 1/4 cup purple beetroot, mandolin/slice

• 1/4 cup pear, mandolin

• 1/2 tsp lemon rind

• 1/2 tsp orange rind

• fresh mint leaves

AIP Coconut mint dressing :

• 2 tbsp natural coconut yoghurt

• 1 tbsp fresh mint, finely chopped

AIP Lemon dressing :

• 1 tbsp avocado oil

• 1 tsp lemon rind

• 1 tsp orange rind

• 1 tsp maple syrup


  1. Using a mandolin or knife, fine slice the beetroot and pear.

  2. In a small bowl combine the coconut yoghurt and mint. Set aside.

  3. In another small bowl combine the avocado oil, lemon and orange rind, and maple syrup. Set aside.

  4. Scatter the beetroot, pear slices and mint leaves on a plate, drizzling the Lemon Dressing between the layers of beetroot.

  5. Top with the Coconut Mint dressing, and the lemon and orange rind.
