Broccoli bacon salad + AIP dressing

A simple green salad that is so full of flavour! It's fresh, crisp and crunchy which is exactly what I want a broccoli salad to be. Being quick to make, it is perfect for lunch or as a side dish.

The sweet and savoury combination of fresh greens, slightly salty bacon and sweet cranberries is addictive.

Broccoli bacon salad & AIP dressing

Prep Time : 10 minutes

Servings : 1 serve


Salad :

• 1/4 broccoli

• 2 bacon rashers

• 1/4 cos lettuce

• 1/4 cucumber

• 1 tbsp dried cranberries

AIP dressing : • 2 tbsp avocado oil

• 2 tbsp natural coconut yoghurt (thick) • 1 tbsp water

• 1 tbsp cider vinegar

• 1 tsp dried herb, rosemary or thyme

• 1/2 tsp salt


  1. Wash and prepare salad, chopping ingredients into small bite sizes.

  2. Cook diced bacon rashers in a little olive oil. Add to salad and then toss to combine.

  3. Add all AIP dressing ingredients in a small bowl or jar and then stir/shake until thoroughly combined.

  4. Drizzle dressing over salad. Enjoy.
