Coconut spice pumpkin porridge

This coconut spice pumpkin porridge is nutritious and delicious, and meets all the requirements of the AIP diet so you won't feel like you're missing out at breakfast! It's warm and comforting with a subtle sweetness and soft texture.

AIP Coconut spice pumpkin & apple porridge

Cook time : 20 minutes

Servings : 2 servings


• 1 cup finely grated pumpkin

• 1/2 cup grated apple

• 1 - 2 tbsp water

• 1/2 cup coconut milk

• 2 tbsp maple syrup

• 1 tsp cinnamon

• 3/4 frozen blueberries

• natural coconut yoghurt

• maple syrup

• toasted coconut


  1. In a small pot combine the finely grated pumpkin and apple and 1 - 2 tbsp water. Place the lid on the pot and gently cook for 10 - 15 minutes until the pumpkin and apple is very soft.

  2. Combine the coconut milk, maple syrup and cinnamon, then stir into the porridge and gently simmer for a few minutes, stirring constantly, until the mixture is the consistency of oatmeal.

  3. For a smoother texture use your stick blender to create a creamy consistency.

  4. Spoon into bowls and top with natural coconut yoghurt, blueberries, toasted coconut and an extra drizzle of maple syrup.
