Good greens bowl
Time : 10 minutes
Servings : 1 person
Ingredients
• 2 cups kale, massaged and diced
• 1 tbsp apple, finely diced
• 1 tbsp cranberries
• 1/2 avocado
• 1 cup broccoli florets
• 1 tsp nutritional yeast
• 1 small courgette, ribbons
• 2 tsp lemon rind
• 1 tsp lemon thyme
• 1/2 tsp salt
• 1 tsp avocado oil
Dressing :
1 tsp white balsamic vinegar
1 tbsp avocado oil
1 tsp lime or lemon juice
2 tbsp natural coconut yoghurt
1 tsp pure maple syrup

Instructions
Wash and remove stems from kale. Massage leaves and then dice finely. Add to a bowl with apple and cranberries.
Make dressing and toss 3/4 through the kale salad.
Place brocolli florets in a small pot with 3 tbsp water and lightly steam for 3 minutes. Rinse under cold water and set aside to dry. Once dry, sprinkle over a little salt and nutritional yeast.
Peal courgette ribbons, drizzle with avocado oil, lemon thyme, salt and lemon rind.
Place kale salad, courgettes, broccoli and avocado in a bowl, drizzle with avocado oil and additional dressing.
