I love a quick one pan meal, and you can't go wrong with this easy to make lamb mince and vegetable stir-fry! Warming and healthy, this nutritional dense and balanced meal is filling and very tasty.
When buying an AIP Coconut Teriyaki Sauce ensure there are no additional ingredients. I use Matakana SuperFoods Organic Coconut Teriyaki Sauce which is 100% natural coconut.
AIP Lamb & vegetable rice
Time : 15 - 20 minutes
Serving : 2 people
Ingredients
• 300g lamb mince
• olive oil
• 2 garlic cloves, minced
• 1/2 tsp salt
• 1.5 tbsp dried thyme
• 1/4 cup red onion, diced
• 1 carrot, finely grated
• 1/4 cup coconut Teriyaki sauce
• 2 tbsp water
• 1.5 cups cauliflower rice
• 1 cup broccoli, small florets and stem
• 2 cups baby spinach or silverbeet, shredded
• 1/2 cup fresh coriander
• 1 large avocado
• 2 tbsp nutritional yeast
Instructions
In a large non-stick pan or skillet, heat the oil and brown the mince, breaking it up as it cooks.
Add the garlic, salt, thyme, red onion, carrot, and Teriyaki sauce. Cook for 3 - 4 minutes.
Gently stir through the cauliflower rice with 2 tbsp water, and add the broccoli. Cook for 4 - 5 minutes until heated through and just soft.
Turn off the heat, toss through the spinach.
Serve with fresh coriander, sliced avocado, a little salt, and a sprinkle of nutritional yeast.
