This is seriously delicious and a must try! So simple with only a couple of ingredients this meal packs serious flavour, is healthy and very filling. It's a staple in my diet and the kids love it too.
Lemon avocado kumara toast
Prep Time : 15 minutes
Servings : 1 - 2 kumara toast
Ingredients
• 1 - 2 kumara slices (1.5cm thick)
• 1/2 avocado, sliced
• 1 tbsp avocado oil
• 1 tbsp lemon rind
• salt
• fresh coriander
Instructions
Slice the kumara long ways to approximately 1 - 1.5 cm thick.
Place the kumara in the microwave on high for 2 minutes, this speeds up the cooking process.
Transfer to the toaster and cook for 10+ minutes until the kumara is golden brown and cripsy of the outside, and cooked through soft on the inside. Note, toasters vary so your cook time may be less or more, just keep cooking until it's perfect.
Serve the kumara topped with sliced avocado, a drizzle of avocado oil, lemon rind, salt and a little coriander.
