This fresh citrus salad is beautifully balanced and delightfully crunchy in texture. Quick to make, just 10 minutes, and you'll be enjoying an utterly scrumptious and nutritious meal or perfect side for your meal.
The trick to this salad, ensuing the flavours are well combined and capturing that light crunch, is to very finely shred the vegetables. I use a mandolin or peeler, and then slice them again into long thin ribbons. The little effort is worth it!
AIP Lemon courgette & apple salad
Time : 10 minutes
Serving : 2 sides or 1 large serve
Ingredients
• 1 large courgette, fine ribbons
• 1 green apple, fine ribbons
• 1 medium cucumber, fine ribbons
• 1/2 lemon rind, fine ribbons
• 1/4 cup mint, shredded
• 1/4 cup coriander
• 1/2 cup microgreens
AIP Lemon dressing :
• 1 tsp white balsamic vinegar
• 1 tbsp coconut milk
• 1/4 cup natural coconut yoghurt
• 1 tbsp lemon rind
• 2 tbsp coriander, shredded
• 1/4 tsp salt
Instructions
Prepare the salad ingredients (courgette, apple, cucumber and lemon rind) using a mandolin or peeler to create long ribbons, then slice these into fine strips.
Place in a large bowl with the herbs, leaving out the microgreens. Gently toss to combine.
In a small bowl combine the dressing ingredients, and gently stir until creamy.
Dress the salad, then top with the microgreens.
