Lemon garlic prawn tortillas

Flatbread tortillas with lemon garlic prawns... this is a dream combination! You don't get more flavour than this. Easy to make and full freshness, these prawn tortillas make a nutritious and delicious lunch or dinner.

AIP Lemon garlic prawn tortillas


Flatbread time : 10 min Tortilla time : 8 - 10 min

Servings : 2 - 3 tortillas


Ingredients

• 2 herb flatbreads, see recipe

• 10 prawns

• 1 garlic clove

• 1 tsp dried coriander

• 2 tsp lemon rind

• 1 tbsp avocado oil

• 1 cup lettuce, shredded

• 1 avocado, cubed

• 1 tbsp red onion

• fresh coriander

• salt


AIP lemon coconut dressing :

• 1/4 cup natural coconut yoghurt

•. 1 tbsp lemon juice


Instructions

  1. Make two herb flatbreads, see recipe

  2. Prepare the salad vegetables and dressing.

  3. Bring a small pan to heat and cook the prawns and garlic for 3 -5 minutes.

  4. To assemble, place the lettuce, avocado, red onion and coriander onto the flatbread, then top with the prawns. Drizzle over lemon coconut dressing, avocado oil and a pinch of salt.
