Lemon salmon penne pasta

Who says you can't eat pasta on the AIP paleo diet? This penne pasta uses grain free cassava pasta with tangy lemon and smoky salmon for a refreshing and delicious meal. Full of flavour and lovely texture this is super quick and very easy to throw together.

Jovial makes a range of grain free pasta from cassava that is AIP and Paleo friendly, it's easy to order online. Penne is a more filling pasta and perfect for this salmon lemon meal. When buying salmon, look for wild caught fresh or naturally smoked salmon with no added sugars.


AIP Lemon salmon penne pasta


Time : 20 minutes

Servings : 1 person


Ingredients

• 1 cup Jovial cassava penne pasta

• 1/2 tsp salt

• 1 tbsp avocado oil

• 1/2 tsp fresh thyme

• 1/2 tsp garlic powder

• 1/2 cup courgette, finely grated

• 1/4 cup red onion, finely diced

• 1 tbsp lemon rind

• 1/2 cup baby spinach

• 1 tbsp nutritional yeast

• 100g natural smoked salmon

• 1/4 cup fresh coriander


Instructions

  1. in a large pot, boil water and cook pasta according to the packet. For this brand it is 15 minutes.

  2. Drain pasta and return to the pot. Drizzle over avocado oil, salt, garlic powder, onion, courgette, lemon rind and nutritional yeast. Stir until pasta is coated.

  3. Add chunks of flaked salmon and baby spinach leaves.

  4. Serve with fresh coriander, a sprinkle of nutritional yeast and salt.
