Nourishing salad bowl

Nourishing bowls are so easy to put together and are a great way to bring more flavour to any leftovers. Balance your bowl with a little protein and an abundance of raw vegetables in an array of colours to create a flavoursome bowl full of nutrients and good fats.

You can use any vegetables you have in your fridge to create a nourishing bowl. I like to dress my salads with a little lemon, coconut yoghurt or avocado oil.


Nourishing salad bowl


Time : 10 minutes

Servings : 1


Ingredients

• 3/4 cup veggie mince (recipe here)

• 1/3 cup red cabbage, finely sliced

• 1 tbsp beetroot, lightly cooked

• 1 tbsp red onion, finely sliced

• 1/4 cup kale, massaged, finely chopped

• 1/4 cos lettuce, shredded

• 1/4 cup broccoli florets

• 1 tbsp celery

• 1/4 cup courgette, finely sliced

• 1 tbsp avocado oil

• 1 tsp lemon juice or lemon rind

• fresh coriander

• 1/2 avocado

• salt to season

• 2 tbsp coconut milk


Instructions

  1. Make the veggie mince dish ahead of time, see recipe. Or set aside your leftovers ready to reheat.

  2. Combine purple salad ingredients.

  3. Combine green salad ingredients, toss through with a drizzle with avocado oil and lemon juice.

  4. Arrange both salads in your bowl with reheated mince, half an avocado and courgette slices.

  5. Season with salt and squeeze of lemon or lemon rind.

  6. Garnish with herbs and drizzle over coconut milk.
