Orzo pasta & mince stir-fry

After a busy day, a super quick nourishing meal is just what we need. This orzo pasta and mince bowl is balanced with everything our bodies crave for energy and healing. Tasty and fresh, it's made with lean lamb mince, heaps of vegetables, coconut aminos and a little pasta.

Orzo is a perfect pasta for this dish as it's small and adds a lovely texture to the mince and vegetables. Jovial makes a range of grain free pasta from cassava that is AIP and Paleo friendly, it's easy to order online.


Orzo pasta & mince stir-fry


Time : 25 minutes

Servings : 2 people


Ingredients

• 400g lamb mince, or another mince of your choice.

• 2 garlic cloves, crushed

• 1 tbsp thyme, dried

• 1 small carrot, finely grated

• 1 small courgette, finely grated

• 1/2 small courgette, chopped

• 2/3 cup cauliflower florets & stems, finely chopped

• 2/3 cup broccoli florets & stems, finely chopped

• 1/2 cup red cabbage, shredded

• 2 tbsp coconut aminos / teriyaki sauce

• 2 cups baby spinach

• coriander to garnish

• salt to season

• 1 cup Jovial cassava orzo, cook for 15 min. Or another pasta of your choice.



Instructions

  1. Prepare all vegetables.

  2. Drizzle olive oil in a large pan over medium heat and brown mince, breaking it up. Add garlic and thyme.

  3. While the mince is cooking bring a small saucepan of water to the boil. Once boiling add orzo and cook according to the packet instructions. For this brand it is 15 minutes uncovered or until just soft.

  4. Once the meat has almost cooked through add carrot, courgette, cauliflower and coconut sauce. Stir through and cook for 3 - 4 minutes until vegetables are just starting to soften.

  5. Add 1 tbsp water to the pan along with broccoli and red cabbage, and cook for 3 - 4 minutes.

  6. Drain orzo and add it to the pan. Toss through with mixture to just heat through.

  7. Turn off heat, toss through spinach and coriander. Season and serve.
