Poached pear coconut crumble

Sometimes the simplest ingredients make for the most delicious meal! This is an absolute favourite of mine. It is full of flavour, perfectly sweet and the perfect breakfast, snack or dessert and best of all it takes no time to make.

Key Ingredients

• Bosc pears - pealed, halved and cored.

• Coconut yoghurt - make sure it is natural with no unfriendly AIP thickeners.

• Maple syrup - always look for 100% natural.

When I make poached pears I always use a deep pan and simmer them slowly on each side so I can achieve the perfect soft yet firm texture. I place the pears cut side down side by side and pour just enough water to cover them.


Poached pear coconut crumble recipe


Time : 30 - 35 minutes

Servings : 2 servings


Ingredients

• 2 pears, pealed, cored & halved

• 2 cups coconut yogurt

• 2 tbsp maple syrup

• 2 tsp cinnamon

• 2 tbsp toasted coconut chips



Instructions

  1. Peal, halve and core pears.

  2. Place pears cut side down in a pan and fill with water until just covering the pears. Bring to a boil, then simmer for 20 - 30 minutes or until soft. Turn pears half way through to ensure they are evenly poached.

  3. Add coconut yoghurt in bowls, drizzle with maple syrup. Gently place hot pears, sprinkle with cinnamon and crumbled toasted coconut. Eat immediately.
