Prawn garlic crouton salad

Nothing says summer quite like a simple and fresh prawn salad! This prawn garlic crouton salad with baby spinach and kale is ready in under 10 minutes, and is perfect for a healthy dinner or lunch. Made with AIP garlic herb crackers (see recipe) broken up for a cunchy bite, and a creamy coconut dressing to finish.

There are good health benefits to this light salad. Prawns are high in protein, low calorie and complete with minerals and vitamins, and spinach and kale are packed full of powerful antioxidants, vitamin c and K, iron, and calcium.

AIP Prawn garlic crouton salad

Cook time : 10 minutes

Servings : 1 person


• 12 prawns

• 2 cups baby kale and spinach leaves

• 1/2 cup cucumber

• 1 tbsp red onion, diced

• AIP garlic herb croutons, recipe here

AIP Coconut dressing :

• 1 tbsp natural coconut yoghurt

• 1 tsp coconut milk

• 1 tsp avocado oil

• pinch of salt


  1. In a bowl combine the kale and spinach leaves, cucumber and red onion.

  2. Make the dressing and set aside.

  3. In a small non-stick pan cook prawns for 3 - 4 minutes or until just cooked. Remove prawn tails and add to salad.

  4. Scatter garlic herb croutons over the salad, and drizzle with coconut dressing.
