Rhubarb apple coconut bowl

Could the colour of rhubarb be any more beautiful! Stewed apple and rhubarb topped with natural coconut yoghurt and toasted coconut is warming, comforting food. If you're looking for that sweeter breakfast, dessert or snack this is delicious.

Rhubarb apple coconut bowl


Time : 15 minutes

Servings : 1 person


Ingredients

• 1 cup apple, cubed

• 1/2 cup rhubarb

• 1/4 cup water

• 2 tbsp natural coconut yoghurt

• 1 tbsp toasted coconut chip



Instructions

  1. In a small pot with a lid, stew apples in water for 8 minutes.

  2. Add chopped rhubarb and cook for another 5 minutes or until soft.

  3. Serve with yogurt and toasted coconut.


Storage


Will keep in the fridge for up to 3 days.
