These nutritionally dense bites make the perfect little snack. About 15 years ago I started replacing crackers with cucumber rounds, they offer that crunchy texture with few calories, and taste so good with avocado and salmon. Being on the AIP diet quick snacks are sometimes hard to create, these are perfect and are packed with many nutritional benefits.
Make sure you cut the cucumber crackers with good thickness. I aim for no less than 0.5 cm so they are not too thin and have that 'crunch' texture. Occasionally I serve these up with a side salad for lunch as they offer a crunch in replace of crackers or bread.
AIP Salmon cucumber crackers
Prep Time : 5 minutes
Servings : 6 - 8 crackers
Ingredients
• 1/3 telegraph cucumber
• 1/2 avocado
• smoked salmon
• fresh coriander
• pinch of salt
Instructions
Wash and then slice cucumber on diagonal to create crackers.
Top with a slice of avocado, smoked salmon, fresh coriander leaf and a pinch of salt.
