Turmeric seared smoked salmon is super delicious, it adds crunch and enhances the flavour of smoked salmon... who would have thought that was possible! Paired with a crunchy avocado herb kale salad, this is a quick and nutritious meal to make.

When buying salmon, look for wild caught fresh or naturally smoked salmon with no added sugars. To make kale delicious in a salad, massage it first before finely dicing.

Seared smoked salmon kale salad
Pre time : 5 minutes
Servings : 1 person
Ingredients
• 80g smoked salmon
• olive oil
• 1 cup iceberg lettuce, sliced
• 1/2 cup kale, massaged, finely chopped
• 1/4 cup cucumber
• 1/2 avocado
• 1 tbsp red onion, finely diced
• 1 tbsp avocado oil
• 2 tbsp fresh herbs, coriander / parsley
• 1 tsp turmeric powder
• 1 tsp lemon rind
• 1/2 tsp salt
Instructions
Wash and prepare lettuce, massaged kale, cucumber, avocado and red onion. In a bowl, gently toss salad together and drizzle over a little avocado oil. Set aside.
Heat a small pan to medium heat with olive oil. Sprinkle turmeric over smoked salmon and sear for 2 minutes on each side.
Place salad on a plate, top with seared salmon and sprinkle with lemon rind, turmeric and fresh herbs.
