A summery berry based smoothie with the added benefits of vegetables. This smoothie is perfectly balanced with the light taste of beetroot enhancing the sweetness of the strawberries. Beetroot and cauliflower are nutritionally dense and when paired with refreshing strawberries it makes for a delicious combination, not to mention beautiful in colour!
Using fresh berries in a smoothie can offer more flavour sometimes. On colder days I get the frozen berries out early to slightly defrost, and even add warm water rather than cold to the smoothie blend.
Strawberry beetroot smoothie
Prep Time : 5 minutes + puree time
Servings : 1 serving
Ingredients
• 1 cup strawberries (fresh can offer more flavour)
• 2 tbsp beetroot puree
• 1/4 cup frozen cauliflower • 3/4 cup natural coconut yoghurt
• 1/2 cup coconut water
• 1/4 cup water • 1 scoop vanilla protein powder (optional)
• 1 tsp pure maple syrup (optional)
Topping :
• Toasted coconut crushed • Freeze dried berries
Instructions
Beetroot Puree : Peel and chop one medium sized beetroot. Place in a small pot and add water. Simmer until soft and fully cooked through. Cool completely and then blend until smooth.
Combine smoothie ingredients and blend until smooth.
Pour into a glass and top with crushed coconut and dried berries.
