Creamy mince penne pasta

This quick and nutritious creamy mince penne pasta is an easy weekly dinner option. Deliciously flavourful, it is made from dairy-free cheese sauce, grain-free cassava pasta, vegetables, lamb mince, and lots of fresh herbs.

To make the super nutritious and creamy dairy-free cheese sauce, follow my recipe here. It can be made at the time of making your pasta or the day before. For grain-free cassava pasta I use the brand Jovial, it can easily be purchased online and comes in spaghetti or orzo also.


AIP Creamy dairy-free mince pasta


Time : 30 minutes

Serves : 2 people


Ingredients

• 2 cups Cassava penne pasta

• Dairy-free cheese sauce recipe here

• 300g Lamb or beef mince

• Olive oil

• 2 cloved garlic, crushed

• 2 tsp rosemary

• 2 tsp fresh lemon thyme

• salt

• 1/4 cup onion, finely diced

• 6 large button mushrooms, diced

• 1/2 cup carrot, very finely grated

• 1/2 cup courgette, very finely grated

• 1 - 2 cups baby spinach, roughly chopped

• 1 tbsp nutritional yeast



Instructions

  1. Make the easy AIP dairy-free cheese sauce.

  2. Bring a pot of water to the boil, and cook pasta according to the packet. For this brand it is 15 minutes.

  3. Heat a large pan with a little oil and brown the mince and onion, breaking up the mince. Once it is browned, add the garlic, herbs, salt, mushroom and carrot.

  4. Drain the pasta and add it to the mince mixture, along with the courgette, spinach and AIP dairy-free cheese sauce. Gently combine over a low heat until the pasta is fully heated through.

  5. Serve with fresh thyme, a sprinkle of nutritional yeast and a little salt.
